It's Chili Weather
Y'all, it is officially chili weather. Chili and cornbread is one of my very most favorite meals for the fall. My mom makes the best chili, and she so graciously shared her recipe with me. I doctored it up a bit after living in Mexico, and I'm sharing it with you today. It is super simple, hearty, and delicious. My husband gives it six stars (out of five!). :)
Chili Con Carne
Ingredients
1 lb. ground turkey or ground beef
1 minced garlic clove
1 cup chopped onion (red or white, take your pick)
1 cup chopped bell pepper (green, red, yellow, whatever floats your boat)
2 (14.5 oz.) canned diced tomatoes
2 small cans tomato paste
1 1/2 tsp chili powder
1 large can pinto beans
1 tsp crushed red pepper flakes
1/2 tsp cayenne pepper
1 pickled jalapeno, chopped
salt to taste
Directions
Brown ground turkey. Add other ingredients and simmer for an hour. Serves 6.
My favorite ways to serve this chili are to eat it with Jiffy cornbread (obvi) and also to top it with shredded cheddar cheese, chopped avocado, and then scoop it up with some yummo tortilla chips. :)
